Quinoa Blueberry Pancakes

Ingredients

  • 2.5 cups quinoa cooked
  • 2 tsp grape seed oil or other oil
  • 1 cup almond milk
  • 4 eggs
  • 1 tbsp honey
  • 1.5 cups blueberries
  • 1 tsp salt
  • 3 tsp baking powder

Instructions

  • In a blender, mix milk, eggs, honey, quinoa and oil together
  • Once smooth add salt and baking powder then blend for a few seconds
  • Preheat griddle and spray with cooking spray
  • Pour ¼ cup batter on the griddle
  • Sprinkle blueberries over the batter and cook
  • Once there are bubbles, flip and cook the other side
  • Pancakes are done when golden brown
